4qt  Roma Tomatoes-we usually try to give San Marzano but may be regular Roma's

5 Large Bell Bell Peppers-choose green, red, or mix

5 Sweet Onions

3 large bunches Cilantro

1 Garlic

Hot Pepper-choose between Jalapeños(will be 5 large or 10 small),  or 5 Hungarian(less hot than Jalapeños).  Hot Peppers are hotter if eaten fresh-if canning then they lose heat.  Take out seeds & ribs for less heat, add for more heat.   

 

**If I eat right away, I only add 1/2 of what recipe calls for-but I'm not a super hot lover, if canning then I add at least what recipe calls for & sometimes more.

 

**I use the recipe The Best Fresh Tomato Salsa on allrecipes but have added garlic to it and modified it to my taste(I add more cilantro and lime juice & don't always use cumin).
